Cement Coffee is redefining the term "coffee bar" with a new outpost in Bayport’s People’s Pub.

The coffee vendor opened at the historic Bayport Avenue building last month  serving signature lattes like the maple brown sugar cinnamon ($8 for hot) and the Earl Grey blueberry ($10 for iced). The menu also includes coffee and tea, such as lavender mint tea ($5) or the cortado ($5), and pastries from Long Island’s Pat’s Bakehouse, like the Earl Grey cookie ($5) or the blood orange and black sesame muffin ($5).

 The goal of this partnership is to bring more life to the popular pub, which only functions Wednesday to Sunday evenings, during the day, Cement Coffee owner Jake Leone said. Leone has previous experience as a barista at multiple cafes and said he spent the last year working on opening his own.

"We’re just operating right on their bar," Leone said. "We’re completely transitioning their space into coffee for daily operations until we have time to look at what a full build out would look like for a coffee space in there."

Cement Coffee Company beans are   sourced from Medford-based roaster ACE Coffee Outpost. ACE Coffee Outpost owner Brian Lentini wants to help make the spot a destination for what he refers to as "coffee tourists," or drop-in visitors.  

"The idea is to not really be a grab and go coffee spot," Lentini said.

Cement Coffee Company is also expected to open at 480 Main St., in Islip midsummer, Leone said. The People’s Pub outpost and Islip’s Main Street location will operate simultaneously.

"Islip doesn’t have any specialty coffee yet, which is surprising with so many on either side of us in different towns," Leone said. "It definitely needed it."

The cafe name honors Leone’s father who owns a construction company. Leone, who also studied architecture and design, plans to use those skills to design the interior of the Islip cafe with his father. The decor will have "a new take on what industrial brutalism could look like," Leone said.
