Burgerology to open in Patchogue, replacing Spycoast Kitchen

Two years after General Douglas MacArthur declared, "I shall return" to the Philippines in 1942, he made good on that promise.
And Eddie Galatoulas was no less serious when, after closing Burgerology’s Patchogue spot in 2024, he told Newsday, "We’ll be back."
Galatoulas, who founded Burgerology in 2017 with his wife, Georgia, and children Maria Milito and John Galatoulas, has taken over the old Spycoast Kitchen & Cocktails and is in the process of transforming it into Long Island’s sixth Burgerology. He hopes to be open by November.
Burgerology 1.0 opened in Patchogue in April 2020, taking over the lease of what had been the short-lived Sneaky Pete’s. Galatoulas initially considered it a pop-up, offering takeout and outdoor dining to pandemic-conscious customers. "It was our number-one location," he said. But with its enormous capacity (200 seats inside plus a large outdoor deck) and nightclub vibe, "it wasn’t right for us. Thinking strategically, we had to admit it’s not who we are. We are about family fun." (Side Street Dive took over 1 Railroad Ave. earlier this year.)
The new spot, which seats 140, has its own checkered past: It was most recently Spycoast Kitchen & Cocktails, an offshoot of the Port Jefferson spot (which closed last year), which took over in 2024 from Minnesota’s, an offshoot of the Long Beach spot, which took over in 2023 from Local Burger Co., an offshoot of the Bay Shore spot which opened in 2018. (After it closed in Patchogue Local Burgers opened spots in Bohemia, Sayville and Southampton.)
There are now five Burgerology locations on Long Island — Rockville Centre, Huntington, Stony Brook, Massapequa and Farmingdale — plus two in New York City.
